Mu Shu Pork Homestyle Recipe

Mu Shu Pork is a Chinese vegetables and pork stir-fry that is wrapped in a Mandarin crepe with hoisin sauce. It’s what I would call a Chinese burrito.  This “home-style” version was taught to me by my Chinese girlfriend, who is a fabulous mother, professional and cook!  She simplified this tedious traditional recipe rather drastically,  using readily available ingredients; cabbage, pork and scrambled eggs,  to make it a convenient and tasty family meal.  Just buy the ready made hoisin sauce.  These are usually the best kind of recipes for a busy family.   The key is, instead of the traditional Mandarin crepes, she substituted it with flour tortillas!  How brilliant is that!

Mu Shu Pork Homestyle Recipe

Ingredients:

  • 1/2 cabbage, sliced thin
  • 4 eggs
  • 250g /1/2 lb. ground pork or strips of pork loin
  • garlic, chopped fine
  • salt
  • pepper
  • rice wine
  • hoisin sauce
  • 10 flour tortillas

Marinade:

    • 1 tablespoon soy sauce
    • 1 tablespoon sake/rice wine
    • 1 tablespoon cornstarch

Method

  1. Place pork in bowl and marinate with one tablespoon of soy sauce, rice wine and cornstarch.  Mix well and let stand to allow flavors to blend.
  2. In frying pan, add oil and chopped garlic, then add chopped cabbage.  Cook for 2-3 minutes, until soft.  Remove from pan and set aside.
  3. Crack eggs in bowl, whisk and make scrambled eggs in the same frying pan.  Remove from pan and set aside.
  4. In frying pan add oil, cook pork until done then add cabbage and scrambled eggs.
  5. Season with salt, pepper and rice wine.  Place in plate
  6. Wash frying pan and wipe dry.  Heat the dry frying pan until hot.  Braise each tortilla on both sides and place on plate.
  7. Now you are ready to assemble.
  8. In a tortilla, add Mu Shu Pork in center, squeeze or pour hoisin sauce on top and fold the bottom half first, then the two sides so the filling won’t fall out the bottom.
  9. Enjoy your wrap!

Tips!

  • Hoisin sauce is on the salty side, so don’t add too much salt to the the actual pork dish.
  • Using a tortilla to wrap any kind of left-over Chinese stir-fry is a good way to make it feel like a new dish!
