Today is unusually sunny and warm for the Pacific Northwest. I crave weather like this and so I shall make this short because I want to go outside and plant my geraniums! This type of weather also brings back fond memories of our days in sunny Kuwait where hummus is a staple. The following recipe is quick and easy using a food processor. Hope you give it a try!
EASY HUMMUS
Ingredients:
1 can garbanzo beans
1 fat garlic clove
juice of one lemon
3 tablespoon olive oil
2 tablespoon tahini
1/2 to 1 teaspoon salt – I use sea salt
Water or liquid from can to adjust consistency approx. ¼ cup
In food processor, add all the above ingredients. If too thick add water to smooth consistency. Adjust salt,garlic and lemon to your liking. Add more olive oil if necessary.
To serve, place hummus in bowl and swirl olive oil on top and sprinkle paprika for color.
Note: This can also be made with other beans like kidney or black beans. When using black beans rinse in water and do not add any water or liquid as the beans will provide enough of its own liquid.
