On a hot day like today, it’s hard to build up an appetite. The textures of the soft tofu and crunchy vegetables and the salty soy sauce and rich sesame oil can make this simple salad a very satisfying meal.
- 1 block silken tofu, cut into cubes
- 1/4 red onion, minced
- 1 can white tuna
- 2 tomatoes, diced
- 1/2 cucumber, chopped into bite size pieces
- 1 celery, chopped into bite size pieces
- soy sauce
- sesame oil
Place chopped tofu on a plate and layer the following ingredients on top: red onion, tuna and tomatoes. Scatter the cucumber and celery around the edges. Pour sesame oil and soy sauce directly on top of everything. Go easy on the soy sauce as it can get too salty. You can also add more later if you like.
