Feeling a bit tired or need a protein boost?  These little chocolate protein bites uses tofu as the vegetable protein.  If you eat protein bars, you will have a good idea what this will taste like.  It has that soy flavor, that is commonly used in those energy bars.  Now, if you don't like tofu, these aren't for you!  I tested them on my boys over the summer - the one who eats protein bars said they were good, the other who doesn't said it wasn't for him.  I guess he was being Japanese polite.  So, don't expect a dessert, but instead think of these as a chocolate flavored 'pick me up' snack without the guilt.   Here we made them as little bite size pieces, but you can also put it in a pan and bake it to make larger pieces.  This recipe was shared by Fumiko who is an avid tennis player!

Cute chocolate flavored tofu snacks
Ingredients
  • ½ lb. Silken Tofu - This is equivalent to ½ a standard container
  • ½ cup sugar
  • 1 egg
  • 2.5 oz. semi-sweet chopped dark chocolate
  • 1 tablespoon milk
  • 4 tablespoon all purpose flour
  • 1 tablespoon corn starch
  • 1 tablespoon cocoa powder - Hershey unsweetened works fine
Instructions
  1. Preheat oven to 350 F
  2. In a bowl combine flour, cocoa powder and cornstarch
  3. in a separate bowl, using a blender, mix tofu and sugar
  4. add the egg and mix again
  5. In a separate bowl, mix milk and the dark chocolate and microwave for a few seconds until soft.
  6. Add this to the tofu mixture
  7. Add the flour mixture to the tofu mixture and blend
  8. Don't mix it too much and be gentle.
  9. Pour batter into little cupcake containers.
  10. bake for 25 to 30 minutes
